Tzatziki

Serves about 4-6 people.

What you need

1 pound plain yogurt
1/2 cucumber
3 garlic cloves, crushed
2 tablespoon chopped fresh mint
2 tablespoon olive oil
1 tablespoon white wine vinegar
salt, to taste
Chopped fresh mint for garnish

Preparation

Place the yogurt in a medium sized bowl.  Peel and grate the cucumber, squeezing a little at a time to remove excess water.  Stir the cucumber into the yogurt.

Stir in the garlic, fresh mint, olive oil and vinegar and season with salt.  Cover and chill until serving.  Just before serving, garnish with chopped fresh mint.
